
HEALTHY DELICIOUS RECIPES WITH CANNED TURKEY FULL
Everyone took home leftovers! I will b making this again, w/ the same minor changes, that ended up being even healthier. This healthy one pan dinner is full of lean ground turkey, green beans, zucchini, summer squash and fire roasted tomatoes. My changes reduced the calories, which a couple of ppl liked. Add some more fiber and extra plant-protein by throwing some canned. The texture & consistency was perfect & equal after baking, which I kept in an additional 5 min. Use whatever type of cooked rice you enjoy Chickpeas. I had 2 double the recipe & used 2 different sized casserole dishes. I replaced it w/ broth & a bit of flour & 1/2 cup of turkey juice, from the baked turkey, which added additional lovely flavor. Again, due 2 ppl on low sodium diets, I did not use canned soup. Even when my hands r cooperating, I use my mini chopper for veggies. Meanwhile, shred the zucchini using a box grater.

Cook through until ground turkey is no longer pink. Next, push the vegetables to the side of the pan and add the ground turkey, garlic, and spices to the middle.

Ppl have told me the mini chopper makes the flavor of the veggies ‘burst’ & I agree. Add the vegetables to the pan and cook until softened, about 3 minutes. W/ my arthritic hands, I used my mini chopper 4 veggies. + My company had a couple of ppl w/ low sodium diets & other dietary restrictions, so I didn’t sprinkle cheese on top. I never liked sslt so I don’t use it & recently I was dx w/ CKD, so No salt, anyway. Make the meatloaf ahead of time and enjoy leftovers for a Meatloaf Sandwich with a side of Sauteed Mushrooms or Shaved Brussels Sprouts Salad.

I tweaked it, as I always do because We love spices& because most recipes dont use enough variety than we like. This turkey meatloaf tastes fantastic leftover, which makes it the ideal choice for meal prep. My company loved this…Yummy! I made this for the 1st x yesterday 4 an early Thanksgiving w/ a few friends, more like family! I baked the Turkey the day b4 & because my company was having ‘traditional’ Thanksgiving in 2 days I wanted 2 make something different. The turkey and rice soak up all the tasty liquid from chicken broth and canned tomato juice, and the green beans provide a built in vegetable.
